BREAKFAST/RECIPESSophie’s Grits—Extra Smooth and Creamy For each serving of grits use ¼ cup of dry old-fashion grits (I never use the pre-cooked or instant grits) Place Grits in 1 cup of cold water per serving and cook on low heat until done (usually about 10 minutes) Add salt to taste Now for the secret ingredient: Add about 2 tablespoons of half and half for each serving and continue to cook stirring constantly to avoid sticking. Use a very low heat for addition 10 minutes. When the consistency is smooth (no lumps please), place in a bowl and add a dollop of real butter (Some folks like to add cheddar cheese while others like their grits sweet and will add grape or strawberry jam.) Enjoy!!!
Sophie’s Famous, Yet Simple, Waffles Pre-heat Waffle Iron to High Mix together the following ingredients: 2 cups self-rising flour In separate bowl, whisk together 1 egg and ½ cup vegetable oil Pour into flour and mix a bit. Start adding enough water until your mixture has a smooth, thick consistency (you can use this same recipe for pancakes but the batter will be a bit wetter) Cook in waffle iron until they are golden brown. Top first of all with a dollop of butter, fresh fruit such as blueberries or strawberries, and then dust some 10X powder sugar on them Serve with hot maple, blueberry, strawberry or boysenberry syrups… Yum, Yum :)
Sophie’s Best Biscuits Pre-heat oven to 450 Sift together the following ingredients: 2 cups self-rising flour In separate bowl, whisk together 1 egg and 1 cup real mayonnaise (this is in lieu of shortening) Measure out ½ cup milk and to this add 1 tablespoon vinegar (this will sour the milk and give the taste of buttermilk) Mix together all your wet ingredients and then fold into the flour Flour your hands and then form biscuits with your hands being careful not to work your dough too much (note: if dough is too sticky, add a bit more flour: if to dry add a tablespoon or two of water) Place biscuits on pan sprayed with butter-flavored Pam and bake for about 10-15 minutes depending on whether or not you made smaller or larger biscuits. As soon as the top starts to brown, remove from oven Serve hot with butter, jam, honey or molasses. Yum :) |
